Cast iron is notable for its good thermal conductivity and high heat capacity, due to which it warms up evenly and retains heat well; in addition, this material has certain non-stick properties and allows you to do without additional coatings (although special care rules must be followed to maintain these properties). Among the shortcomings, a significant weight and a tendency to oxidize during prolonged contact with food can be noted; the latter does not appear during cooking, however, it is not recommended to use cast iron cookware for storing cooked dishes.
