Such devices are used mainly in the confectionery business (hence the name) — to decorate desserts and to form certain products, such as cookies. Note that a confectionery syringe performs a similar function (see the relevant paragraph); There is no fundamental difference between these tools, and the choice depends mainly on personal preferences.
