It is based on a device in the shape of the letter “T” laid on its side, which combines a clamp for the blade to be sharpened and guides for the whetstones (touchstones). The Lansky system allows user to select the required sharpening angle – it depends on which guide hole the whetstone is inserted into; and the set itself usually comes with several whetstones (with different grain sizes). Such sharpeners are especially convenient when you have to deal with different types of tools that require different sharpening angles – for example, fillet and regular chef knives (the former are sharpened at a very acute angle, the latter at a medium angle).
