A ceramic wheel which micro sharpens and hones the Signature knife blades to the exact 15° angle as applied by hand during the manufacturing process. EASY TO USE - The ceramic wheel is covered by a c more→lear knife-guide, designed to keep the knives in the correct position. Sharpen little and often, until the desired edge sharpness is achieved. Apply gentle pressure as if cutting a loaf of bread and take 20 strokes (if sharpened regularly) in a back and forward motion.
