Massive cast iron pans heat up evenly and store heat well, this material normally tolerates high temperatures, and due to some tricks it can even acquire non-stick properties (a separate non-stick coating is usually not applied to cast iron). A lot of weight can create some inconvenience — but on the other hand, it also ensures the stability of the dishes.
