With a high sensitivity, the sound will be sharp and loud, with a low sensitivity, the sound will be soft and quiet. Accordingly, the first option is better suited when expressiveness and significant differences in volume are needed, the second is useful to ensure a smooth, smooth sound. It is not uncommon to find the ability to reduce the sensitivity to zero, when the volume of the sound will be the same with any press; this can be used as an artistic technique or for authenticity with some voices (eg harpsichord).
