Air pockets

— in the classic form, air pockets are known as "granton edges," which are characteristic indentations on the blade of the knife above the cutting edge. In addition to this, in cheese knives (see "Type"), air pockets can take the form of solid slots. However, both variants serve the same purpose — they are designed to prevent sliced products from sticking to the blade. Furthermore, the indentations or slots slightly reduce the weight of the knife.
